Raw Apple Cake

So many of my most treasured recipes come from, my most treasured people.  I love a good "passed down" recipe.  This recipe came from a wonderful woman who lived for many years in our community.  She has since moved away, but this is her recipe.  Each time I make it, which is often, I think of her and I feel gratitude for the mark she left on my life.  She lived a challenging life with grace.  And that I admire.  This cake tastes it's very best when I can pick ripe apples from the sweet tree in our back yard.

1 c. oil
2 eggs
2 c. sugar
1 t. Casa Bella Vida Vanilla
3 c. flour
1 t. soda
1 t. cinnamon
1 t. salt
¼ t. nutmeg
1 c. pecans, chopped
4 c. raw chopped apples

Combine first four ingredients.  Add remaining ingredients and mix.  It will be stiff, you may need to stir in pecans and apples.

Bake 350 degrees for 1 hour.  Check doneness with a toothpick making sure it comes out clean.

Serve with our homemade whipped cream.

*Amazing cake!  Also delicious with a caramel sauce
