Mixed Berry Compote

 Give us ALL of the berries!!
We cannot get enough!  The berries from our garden were extra special this year and we didn't let one go to waste.  We made this compote to pour over ice cream, cakes and waffles.  You really could drink it, it's that good!!
Frozen berries work great too. We froze and used so many of our own berries for the fantastic recipe!
4 c. Mixed berries (frozen)
3/4 c. Sugar
1/2 c. Water
Zest of one lemon
Juice of one lemon
2 T. Cornstarch mixed with
2 T. Water
2 t. Casa Bella Vida Vanilla
 
In a saucepan, over medium heat, combine berries, 1/4 c. Water and sugar. Bring to a boil. Add in cornstarch and water mixture and cook until thickened. Remove from heat, add lemon juice, zest, and vanilla. Mix well.
Serve warm over ice ream, waffles or pancakes. Can be stored in the refrigerator for up to two weeks. Can also be frozen.
