Farm To Table Peach Cobbler

The Farmer has been growing peaches for many years.  He's a good farmer.  Sometimes the Winter's seem extra long and we are thrilled when Peach Season is in full swing.  We find any and every opportunity to eat those wonderful peaches.  This is one of our favorite recipes.  You can use fresh peaches or you can use the bottled peaches from the previous year. Either way this is amazing!

Orchard To Table Peach Cobbler

½ c. butter (1 stick)

1 c. all purpose flour

1 c. granulated sugar

1 t. baking powder

¾ c. milk

2 t. Casa Bella Vida Vanilla

3 ½ c. fresh or canned peaches

¾ c. firmly packed brown sugar

Ground cinnamon

*Brown Sugar Whipped Cream or ice cream

 Preheat oven to 350 degrees.  Melt butter in a square baking dish or a cast iron skillet, in the hot oven.  In a mixing bowl, stir together flour, sugar, and baking powder.  Add milk and vanilla to dry mixture and stir well. Remove hot pan with melted butter from oven and pour batter into pan.  Do not stir.  Add drained peaches over batter, sprinkle with cinnamon and brown sugar.  Bake until top is brown and batter is somewhat firm.  About 40-50 minutes. 

Serve with Brown Sugar whipped cream or ice cream.  This is amazing!
