Give us all things Churro!! In the evenings, in a park not too far from our home the Churro Man is setting up his stand. He carefully lays the churro dough into the hot grease in a circular pattern. The churros cook in the grease until they are golden brown. You can smell it from far away. It’s then he lifts the churros into a box he has filled with a cinnamon sugar mixture. The sugar melts into the creases of the hot churro. It is perfection! He cuts the churros into smaller pieces and places them into small brown paper bags where the excess grease is absorbed. He then will offer chocolate or sweetened condensed milk to dip them into. It is an experience to eat from the Churro Man’s stand.

If you don’t have a Churro Man close by, these churro bites are a yummy second! They will get eaten quickly. Make a big batch!
8 c. Rice Chex Cereal
½ c. butter
2 t. Casa Bella Vida Vanilla
½ c. brown sugar
¼ c. white sugar
2 t. cinnamon
Preheat oven to 275 degrees. Line a baking sheet with parchment paper.
Mix the white sugar and cinnamon in a small bowl. Set aside.
In a large glass measuring cup melt the butter in the microwave. Add the brown sugar and mix well. Return to the microwave for 20-30 seconds making sure it doesn’t boil up. Whisk until sugar is dissolved.
Pour Chex into a large bowl, then drizzle the sauce over the top. Gently mix until cereal is evenly coated. Spread onto parchment, sprinkle sugar evenly over and mix. Bake for 45 minutes, stirring every 15 minutes.
