Banana Sheet Cake

Banana Sheet Cake with Cream Cheese Frosting

½ c. butter, softened

1 ½ c. sugar

2 large eggs

1 c. sour cream

2 tsp. Casa Bella Vida Mexican Vanilla

2 c. flour

1 t. baking soda

¼ t. Casa Bella Vida Sea Salt

1 c. mashed banana (3 bananas)

1 c. chopped pecans


½ c. butter, softened

1 oz. cream cheese

1 t. Casa Bella Vida Mexican Vanilla

3 c. powdered sugar

2 T. heavy whipping cream

Preheat oven to 350 degrees.  Grease a 9 x 13 cake pan.  In a large bowl with a hand mixer, cream butter and sugar until light and fluffy.  Add eggs, sour cream, and Vanilla.  Blend until combined and creamy.  Add flour, baking soda, and salt.  Blend until combined.  Add mashed banana and pecans, gently stir together.  Dump batter into the baking dish and spread evenly.  Bake 25-35 minutes, until the toothpick comes out clean.  Let the cake cool completely.

In a large bowl beat cream cheese and butter until combined.  Add Casa Bella Vida Vanilla, powdered sugar and heavy cream beat together until desired consistency.  Garnish with chopped pecans.

This is an excellent cake!
