Apricot Cream Cheese Cookies
Jam cookies have been around for as long as I can remember. They are a tried-and-true recipe. We can safely say that if our grandmothers made a recipe over and over, it would stand the test of time. This is one of those great recipes. We have tried many kinds of jam in these cookies, and they are all delicious. Apricot Jam just speaks to our hearts. We grow apricot trees and so always have jam on hand. These are a favorite!
1 ½ c. butter, softened
1 ½ c. sugar
8 oz. cream cheese
2 large eggs
2 t. Casa Bella Vida Vanilla
2 T. lemon or lime juice
1 ½ t. zest of lemon or lime
4 ½ c. flour
1 ½ t. baking powder
Apricot jam
Powdered sugar
Combine butter, sugar, and softened cream cheese mixing until well combined. Blend in eggs, lemon/lime juice and zest. Add dry ingredients and mix well. Chill for at least one hour.
Shape into balls, a tablespoon each. Place on a cookie sheet with parchment. Using your thumb press an indentation in the center of the dough and fill with Apricot jam…or any other jam, about ¼ t. Any jam would work for this cookie!
Bake at 350 degrees for 15-20 minutes
